Bubba's Shrimp Boil
Large shrimp slit through their shells and simmered in a boldly seasoned boil with jalapeños, garlic, coriander, mustard seeds, and peppercorns.

- 1 0.5 lb large shrimp in shells
- 4 clove garlic, large
- 1 small onion, chopped
- 1 lemon, halved
- 0.3 cup pickled jalapeño slices
- 2 tbsp kosher salt
- 2 bay leaves, crumbled
- 2 tsp coriander seeds
- 2 tsp mustard seeds
- 2 tsp black peppercorns
- 1 tsp celery seed
- 1 tsp red pepper sauce

Make a slit through the shell down the curved back of each shrimp to the tail; remove vein. Refrigerate.

Bring 2 quarts water and all remaining ingredients to a boil in a large pot.

Add shrimp; return to boil and cook 2–3 minutes until pink.

Drain; serve with lemon wedges.
