Brunch Casserole

A slow cooker brunch casserole of ground beef, mushrooms, spinach, and nutmeg bound together with eggs, milk, and sharp cheddar cheese.

  • 1 0.5 lb ground beef
  • 1 large onion, finely chopped
  • 2 clove garlic, minced
  • 4 oz sliced mushrooms, drained
  • 2 tsp salt
  • 0.5 tsp nutmeg
  • 0.5 tsp dried oregano
  • 0.5 package frozen spinach, thawed and drained
  • 3 tbsp flour
  • 6 eggs, beaten
  • 0.3 cup milk, scalded
  • 0.5 cup sharp cheddar cheese, grated

Instructions

    Brown ground beef and onion in olive oil; drain well. Place in greased crockpot.

    Stir in mushrooms, salt, nutmeg, oregano, spinach, and flour until blended.

    Add beaten eggs, scalded milk, and half the cheese; mix well.

    Sprinkle remaining cheese on top. Cook on LOW 4–6 hours.
