Bright Jalapeño–Lime Everyday Sauce (Medium)
Tangy, grassy jalapeño and lime sauce with a fresh citrus pop that works on almost everything.

- 8 jalapeños (≈220 g), stems off (seed some for less heat)
- 1 small onion
- 3 garlic cloves
- 1 ⅔ cup white vinegar (160 ml)
- 1 ⅓ cup water (80 ml)
- 1 tsp kosher salt
- 1 tsp sugar
- 1 Juice of 1–2 limes
- 1 Handful cilantro (optional)

Rough-chop peppers and onion; simmer with garlic, vinegar, water, salt, and sugar for 10 minutes.

Blend very smooth; finish with lime (and cilantro). Bottle.

Add 1 green apple for body and gentle sweetness.

For smoke, char the jalapeños first.

For a more sauce like texture, sift the pulp. For a salsa like texture, keep it.
