Breaded Rib Roast

- 4 lb beef rib roast
- 0.5 tsp salt
- 0.3 tsp black pepper
- 2 count cloves garlic, chopped
- 2 tbsp butter, softened
- 2 tbsp olive oil
- 1 cup plain dry bread crumbs
- 0.3 cup grated Romano cheese
- 2 tbsp fresh parsley, chopped

Preheat oven to 325 degrees F.

Wash and pat dry the roast. Season all over with salt and pepper.

Combine chopped garlic, butter, and olive oil. Coat the roast completely with this mixture.

Mix bread crumbs, Romano cheese, and parsley. Press firmly into the meat on all sides.

Place on a roasting rack in a shallow baking pan.

Roast for about 2 hours, until a thermometer reads 130°F for medium-rare or 160°F for well done.
