Braciole Balsamico

  • 2 lb beef sliced thin for braciole
  • 4 oz prosciutto, sliced
  • 0.5 cup fresh basil leaves
  • 0.3 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp crushed red pepper flakes
  • 0.3 cup balsamic vinegar
  • 2 cloves garlic, finely minced
  • 0.3 cup olive oil

Instructions

    Place beef slices flat; sprinkle with red pepper and parsley. Lay prosciutto over beef; top with basil and Parmesan.

    Roll tightly and secure with kitchen twine or toothpicks.

    Combine balsamic vinegar, garlic, and olive oil; pour over beef rolls. Marinate 1 hour.

    Remove from marinade (reserve it). Heat olive oil in a heavy skillet; brown rolls on all sides.

    Add marinade and simmer 20 minutes. Serve sliced with pan sauce.
