Bourbon Chicken

- 1 lb chicken leg or thigh meat, cut into bite-size pieces
- 4 oz soy sauce
- 0.5 cup brown sugar
- 0.5 tsp garlic powder
- 1 tsp ground ginger
- 2 tbsp dried minced onion
- 0.5 cup bourbon whiskey
- 4 tbsp white wine, divided

In a large zip-lock bag or bowl, combine soy sauce, brown sugar, garlic powder, ginger, minced onion, bourbon, and 2 tablespoons white wine.

Add chicken pieces and toss to coat. Marinate in refrigerator overnight, or at least 4 hours.

Preheat oven to 350°F (175°C).

Place chicken in a single layer in a baking dish, reserving marinade.

Bake for 1 hour, basting with reserved marinade every 10 minutes.

Remove chicken from pan. Scrape pan juices into a skillet and add remaining 2 tablespoons white wine.

Bring to a simmer over medium heat, add chicken back to the pan, and cook for 1 minute until glazed.

Serve over white rice.
