  • 3 whole large sweet potatoes
  • 1 cup granulated sugar
  • 2 whole eggs
  • 0.5 cup butter, softened
  • 1 tsp vanilla extract
  • 0.3 cup melted butter, for topping
  • 0.3 cup all-purpose flour, for topping
  • 1 cup brown sugar, for topping
  • 1 cup chopped pecans
  • 1 tbsp ground cinnamon

Instructions

    Boil sweet potatoes until tender. Remove skin when cooled.

    Whip sweet potatoes until fluffy. Add sugar, eggs, softened butter, and vanilla extract. Mix well.
