  • 1 can whole beets, drained and grated (reserve juice)
  • 4 cup water
  • 1 medium onion, finely chopped
  • 2 tbsp sugar
  • 1 tsp sour salt or lemon juice
  • 1 tsp salt, or to taste

Instructions

    In a medium saucepan, simmer the chopped onion in the water for 10 minutes over medium heat.

    Add the grated beets and reserved beet juice to the pot.

    Simmer for an additional 5 minutes.

    Stir in the sugar and sour salt or lemon juice. Season with salt to taste.

    Serve hot or chilled, with a dollop of sour cream if desired.
