Boneless Buffalo Wings

  • 1 cup all-purpose flour
  • 2 tsp salt
  • 0.5 tsp black pepper
  • 0.3 tsp cayenne pepper
  • 0.3 tsp paprika
  • 1 egg
  • 1 cup milk
  • 2 boneless, skinless chicken breast fillets
  • 4 cup vegetable oil, for frying
  • 0.3 cup Louisiana hot sauce
  • 1 tbsp margarine

    Combine flour, salt, black pepper, cayenne, and paprika in a bowl. Whisk egg and milk together in another bowl.

    Slice each chicken breast into 6 pieces. Dip each piece in egg mixture, then in the flour blend; repeat for a double coat.

    Chill breaded chicken on a plate for 15 minutes.

    Heat oil in a deep fryer to 375°F. Fry chicken pieces in batches for 5–6 minutes until golden brown. Drain on paper towels.

    Microwave hot sauce and margarine for 20–30 seconds until margarine melts; stir to combine.

    Place chicken in a container with a lid, pour sauce over, cover, and shake gently to coat. Serve with bleu cheese dressing and celery.
