Blue Crab Cakes

- 1 egg, lightly beaten
- 2 tbsp mayonnaise
- 2 tsp prepared Creole mustard
- 2 tsp prepared horseradish
- 2 tsp Worcestershire sauce
- 1 0.5 tsp crab boil seasoning
- 1 tsp coarsely ground black pepper
- 0.3 tsp salt
- 5 dash hot pepper sauce
- 1 lb crabmeat, picked over for shells
- 0.8 cup saltine cracker crumbs
- 0.5 cup minced red bell pepper
- 3 tbsp olive oil
- 1 tbsp unsalted butter
- 1 lemon, cut into wedges

In a large bowl, stir together the egg, mayonnaise, mustard, horseradish, Worcestershire sauce, crab boil seasoning, pepper, salt, and hot sauce.

Gently fold in the crabmeat, cracker crumbs, and minced bell pepper.

Form the mixture into 8 patties, each about 3/4 inch thick.

Warm the olive oil and butter together in a large skillet over medium-high heat.

Fry the crab cakes for 5 to 7 minutes on each side, or until golden brown.

Drain on paper towels. Serve immediately with lemon wedges.
