  • 1 lb black beans 1 medium onion, chopped
  • 6 cup water 2 cloves garlic, minced
  • 1 bay leaf
  • 1/

  • 1 medium green pepper, chopped 1/2 tsp. ground cumin

  • 2 cup brown rice, cooked

Instructions

    WASH beans. BRING to boil in water. TURN off heat, and let stand 1 hour. Pour water

    off and add fresh water. ADD bay leaf and oregano. BRING to boil. SIMMER 2 hours or

    until beans are tender. SAUTE onion, green pepper, and garlic in water. STIR into beans

  5. 5

    with salt and cumin. ADD rice. SIMMER 10–15 minutes. REMOVE bay leaf.
