Big Soft Ginger Cookies

Chewy, soft ginger cookies with cinnamon, cloves, and molasses — rolled in sugar and perfectly spiced for the holidays.

  • 2 0.3 cup all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp baking soda
  • 0.8 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.3 tsp salt
  • 0.8 cup margarine, softened
  • 1 cup white sugar
  • 1 whole egg
  • 1 tbsp water
  • 0.3 cup molasses
  • 2 tbsp white sugar for rolling

Instructions

    Preheat oven to 350°F. Sift together flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.

    Cream together margarine and 1 cup sugar until light and fluffy. Beat in egg, then stir in water and molasses.

    Gradually stir in sifted dry ingredients.

    Shape dough into walnut-sized balls and roll in remaining 2 tablespoons sugar. Place 2 inches apart on ungreased cookie sheet; flatten slightly.

    Bake 8-10 minutes. Cool on baking sheet 5 minutes before removing to wire rack.
