Big Boy's Strawberry Pie
Copycat Big Boy Restaurant fresh strawberry pie with a buttery homemade crust and a glossy 7-Up glaze — bright, sweet, and absolutely stunning.
Ingredients
- 1 cup all-purpose flour
- 0.3 tsp salt
- 3/8 cup butter
- 1 0.5 tbsp vegetable shortening
- 2 tbsp ice water
- 1 cup granulated sugar
- 3 tbsp cornstarch
- 1 pint fresh strawberries, washed and hulled
- 12 oz 7-UP soda
- 1 cup whipped cream, for serving

Combine flour and salt in a food processor. Cut in butter and shortening; process until mixture resembles coarse meal. Add ice water drop by drop, processing briefly. Wrap dough and chill 1 hour.

Remove from refrigerator and let stand 15 minutes before rolling out. Roll into a circle and fit into a 9-inch pie pan. Bake blind at 375°F (190°C) until golden, about 12 minutes. Cool completely.

In a medium saucepan, combine sugar, cornstarch, and 7-UP. Cook over medium-high heat, stirring, until mixture becomes thick and clear. Remove from heat and cool to room temperature.

Once cooled, add a couple drops of red food coloring to the glaze.

Cut strawberries and arrange in the cooled pie shell. Pour the glaze evenly over the berries.

Refrigerate until set, about 30 minutes. Serve topped with whipped cream.
