Bennigan's Onion Soup
Copycat Bennigan's French onion soup — caramelized onions in a chicken-beef broth, topped with Swiss and Parmesan cheese on French bread, broiled golden.

- 0.5 lb firm white onions, sliced
- 0.3 cup butter
- 2 tbsp corn oil
- 3 tbsp flour
- 1 quart chicken broth
- 1 quart beef broth
- 8 slice French bread
- 1 cup Swiss cheese, shredded
- 0.5 cup Parmesan cheese, grated
Instructions

Sauté onions in butter and oil until transparent but not well browned.

Turn heat to lowest point; sprinkle onions with flour, stirring vigorously.

Pour into a Dutch oven and stir in chicken and beef broth. Heat thoroughly.

Divide among 8 oven-proof bowls.

Mix equal parts Swiss and Parmesan to a smooth paste and spread over French bread slices.

Float a slice of bread on top of each serving. Place all bowls on oven rack 4 inches from broiler. Broil until cheese melts. Serve at once.
