Bennigan's Chicken Salad

  • 1 lb chicken breast meat, cooked and diced
  • 0.5 cup celery, diced
  • 1 cup mayonnaise
  • 0.3 tsp salt
  • 0.3 tsp black pepper
  • 0.5 tsp sugar
  • 0.5 tsp onion powder
  • 0.3 cup toasted sliced almonds
  • 1 tbsp fresh lemon juice
  • 1 cup crushed pineapple, well drained
  • 2 cup alfalfa sprouts (for serving)

Instructions

    Place diced chicken in a large bowl. Add celery and mix to combine.

    Add mayonnaise, salt, pepper, sugar, onion powder, lemon juice, and drained pineapple.

    Mix gently with a rubber spatula until well combined. Chill at least 30 minutes.

    To serve, arrange a bed of alfalfa sprouts on each plate.

    Scoop chicken salad over the sprouts. Sprinkle with toasted almonds and serve chilled.

    Optional: serve in a hollowed-out fresh pineapple half for presentation.
