Bennigan's Broccoli Bites
Copycat Bennigan's crispy broccoli bites — a cheesy mixture of broccoli, Monterey Jack, colby, and bacon fried golden in Italian breadcrumbs.

- 3 count eggs
- 6 oz shredded Monterey Jack cheese
- 6 oz shredded colby cheese
- 16 oz frozen chopped broccoli, thawed and thoroughly drained
- 2 0.5 oz real bacon pieces
- 0.5 oz diced yellow onion
- 1 oz all-purpose flour
- 1 cup Italian bread crumbs, as needed
- 4 cup vegetable oil, for frying

Drain thawed broccoli thoroughly by pressing through a strainer.

Beat eggs in a mixing bowl until well blended. Add all ingredients except bread crumbs. Stir with a spatula until thoroughly combined.

Refrigerate the mixture for 1 hour to help bind it.

Heat oil in a deep pan or fryer to 350°F (175°C).

Set up a shallow pan with Italian bread crumbs. Scoop about ½-oz portions of broccoli mixture into the crumbs. Form each into a ball and coat well.

Fry broccoli bites in batches until golden brown, about 2–3 minutes. Drain on paper towels and serve immediately.
