Benihana's Fried Rice

Copycat Benihana hibachi-style fried rice made with scrambled eggs, toasted sesame seeds, and soy sauce — the classic teppanyaki steakhouse side dish.

  • 1 cup uncooked white rice
  • 5 tbsp butter
  • 1 cup yellow onion, chopped
  • 1 cup carrots, chopped
  • 0.7 cup scallions, chopped
  • 3 tbsp sesame seeds
  • 5 count large eggs
  • 5 tbsp soy sauce
  • 0.5 tsp salt
  • 0.3 tsp black pepper

Instructions

    Cook rice according to package directions and set aside.

    In a large skillet, melt butter over medium heat. Add onions, carrots, and scallions. Sauté until carrots are tender.

    Spread sesame seeds in a shallow pan and bake at 350°F (175°C) for 10–15 minutes, shaking occasionally, until golden brown.

    Lightly grease a separate skillet. Beat eggs, pour in, and scramble until just cooked.

    Combine cooked rice, sautéed vegetables, toasted sesame seeds, and scrambled eggs in the large skillet. Add soy sauce and stir well. Season with salt and pepper to taste.
