Beef Fajita Salad

  • 8 oz Italian dressing
  • 1 tsp ground cumin
  • 0.5 lb beef strips for fajitas
  • 0.5 cup corn kernels
  • 0.5 cup cooked kidney beans
  • 0.5 cup red onion, sliced
  • 0.5 cup shredded Cheddar cheese
  • 1 whole tomato, chopped
  • 8 cup mixed salad greens
  • 2 cup crushed tortilla chips

Instructions

    Combine Italian dressing, cumin, and a dash of hot pepper sauce in a bowl. Reserve ½ cup.

    Toss beef strips with enough dressing to coat and marinate for 1 hour.

    In a hot skillet, cook marinated beef until done. Allow to cool.

    In a medium bowl, combine the beef with corn, kidney beans, onion, and the reserved ½ cup dressing.

    Refrigerate until chilled.

    Arrange salad greens on plates. Top with the beef mixture, Cheddar cheese, tomato, and crushed tortilla chips.
