Beef Bourguignon

- 4 lb lean beef, cubed
- 1 cup red wine
- 1/3 cup vegetable oil
- 1 tsp dried thyme
- 1 tsp black pepper
- 8 slice bacon, diced
- 2 clove garlic, crushed
- 1 medium onion, diced
- 1 lb mushrooms, sliced
- 1/3 cup all-purpose flour

Marinate beef in wine, oil, thyme and pepper for 4 hours at room temperature, or overnight in the refrigerator.

In a large skillet, cook bacon until soft. Add garlic and onion, sautéing until soft. Add mushrooms and cook until slightly wilted.

Drain beef, reserving the marinade liquid.

Place beef in slow cooker. Sprinkle flour over the beef and stir until well coated.

Add the mushroom and bacon mixture on top. Pour reserved marinade over everything.

Cook on LOW for 8 to 9 hours, until beef is very tender.

Serve with crusty bread, egg noodles, or mashed potatoes.
