Beef Barley Soup

  • 1 lb beef stew meat, bite-sized pieces
  • 6 cup water or beef stock
  • 0.3 cup pearl barley
  • 3 carrots, sliced
  • 1 rutabaga, diced
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 tomatoes, chopped
  • 2 tbsp soy sauce
  • 1 tsp salt

Instructions

    Brown beef in your soup pot. Add water or stock and barley, bring to a low boil.

    Skim off any scum that forms. Add soy sauce and herbs to flavor.

    Simmer for 1 hour, then add carrots, rutabaga, onion, celery, and tomatoes.

    Continue simmering until carrots are tender, about 30 more minutes.

    Season with salt to taste and serve hot.
