Ingredients

Servings
4
  • 6 tbsp vegetable oil
  • 2 lb beef stew meat
  • 3 each onions, minced
  • 6 each garlic cloves
  • 0.5 tsp ginger
  • 0.5 tsp cayenne
  • 1 tbsp paprika
  • 2 tsp salt
  • 0.5 tbsp pepper
  • 0 cup plain yogurt, beaten lightly

Instructions

  1. 1

Preheat oven to 350 degrees F.

  2. 2

Heat the oil in a wide, flameproof casserole type pot over a medium high flame.

  3. 3

When hot, put in as many meat pieces as the pot will hold easily in a single layer.

  4. 4

Brown the meat pieces on all sides and set them aside in a deep plate.

  5. 5

Brown all the meat this way, then remove.

  6. 6

Put the onions and garlic into the same pot and turn the heat down to medium.

  7. 7

Stir and fry the onion-garlic mixture for about 10 minutes or until it has browned.

  8. 8

Now put in the browned meat as well as any juices that might have accumulated in the plate.

  9. 9

Also put in the ginger, cayenne, paprika, salt, and pepper.

  10. 10

    Stir for a minute.

  11. 11

Now put in the yogurt and bring to a simmer.

  12. 12

Cover tightly, first with aluminum foil and then with a lid, and bake in the oven for 1 1/2 hours.

  13. 13

The meat should be tender by now.

  14. 14

If it is not tender, add 1/2 cup of boiling water, cover tightly, and bake another 20 to 30 minutes or until meat is tender.

  15. 15

    Stir meat gently before serving.
