Beef and Peppers

Lean round steak slow-cooked with green pepper rings, soy sauce, ginger, and garlic — a simple weeknight slow cooker dinner.

  • 2 lb lean round steak
  • 2 green bell peppers, thinly sliced
  • 2 tbsp dried minced onion
  • 1 cup beef broth
  • 2 tbsp low-sodium soy sauce
  • 0.5 tsp ground ginger
  • 1 clove garlic, minced
  • 1 tsp Worcestershire sauce

Instructions

    Cut steak into serving-size pieces. Place pepper rings in bottom of crockpot, reserving a few for top.

    Place meat on top of peppers.

    Combine broth, soy sauce, ginger, garlic, Worcestershire, and onion; pour over meat.

    Cook on LOW 8–10 hours.
