Beef and Mushroom Casserole

  • 1 lb lean ground beef
  • 1 0.5 cup mushrooms, sliced
  • 1 cup red bell pepper, chopped
  • 2 cloves garlic, crushed
  • 5 0.5 oz risotto mix with garden vegetables (1 package)
  • 2 tbsp Parmesan cheese, grated
  • 1 tbsp fresh basil, chopped
  • 0.5 tsp salt
  • 0.3 tsp black pepper

Instructions

    Prepare risotto mix according to package directions.

    Meanwhile, brown ground beef, mushrooms, bell pepper, and garlic in a large nonstick skillet over medium heat, 8-10 minutes, breaking beef into crumbles.

    Pour off drippings. Season with salt and pepper.

    Stir prepared risotto into beef mixture.

    Sprinkle with Parmesan cheese and fresh basil. Serve immediately.
