Bean Soup Roman Style

- 1 tbsp lard or olive oil
- 2 oz salt pork, chopped fine
- 1 medium onion, chopped fine
- 1 clove garlic, chopped fine
- 1 stalk celery, chopped fine
- 2 fresh tomatoes fresh tomatoes, peeled and cut into pieces
- 1 tsp salt
- 0.5 tsp black pepper
- 4 cup warm water
- 2 cup cooked white beans
- 1 cup elbow macaroni
- 2 tbsp grated Romano cheese
Instructions

Melt lard or heat oil in a saucepan. Add chopped salt pork, onion, garlic, and celery. Brown well.

Add tomatoes, salt, pepper, warm water, and beans. Cook for 5 minutes.

Add elbow macaroni and cook 8 minutes longer until pasta is tender.

Sprinkle with Romano cheese and serve.
