Bean and Bacon Soup

  • 0.5 lb of navy beans
  • 6 slice of bacon
  • 1 onion, chopped
  • 0.5 cup of chopped celery

    Salt and Black Pepper to taste Soak the navy beans in cold water for about 2 hours. Drain the beans and wash with cold wa- ter. Place the beans in a pot, cover with water and cook for about 45 minutes to an hour. Add the chopped onion, celery, salt, and pepper and cook for about a half an hour or until the beans are tender. While the beans are cooking fry the bacon until crisp. After the bacon has cooled crumble in the pot of beans and let simmer for a few more minutes.
