Bay Scallops with Scallions

  • 4 tbsp butter
  • 1 0.5 lb bay scallops
  • 1 small bunch scallions, sliced
  • 0.3 cup dry white wine
  • 3 tbsp fresh parsley, minced
  • 1 lemon, cut into wedges

Instructions

    In a large, heavy skillet, heat the butter over medium-high heat.

    Season the scallops with black pepper. Add to the skillet and saute very quickly until slightly browned, about 4 minutes.

    Remove scallops with a slotted spoon and place on a warmed serving dish.

    Saute the scallions in the same skillet over medium-high heat for 5 minutes. Do not brown.

    Add the white wine to deglaze the pan over high heat. Cook until wine is reduced by half.

    Pour the sauce over the scallops. Sprinkle with fresh parsley.

    Serve with lemon wedges to squeeze over the scallops.
