Classic Skillet Fried Chicken

  • 1 whole chicken, cut into serving pieces (about 3-4 lbs)
  • 0.3 cup all-purpose flour
  • 1 tsp salt
  • 0.3 tsp ground black pepper
  • 0.5 cup vegetable shortening

Instructions

    Combine flour, salt and pepper in a large plastic bag. Add chicken pieces and shake to coat.

    In a large, deep skillet over medium heat, melt the shortening. When hot, add the floured chicken pieces.

    Cook uncovered for 20–30 minutes, turning occasionally, until golden brown on all sides and cooked through with no pink remaining.

    Drain on paper towels and serve immediately. Also excellent served cold the next day.
