Barbecued Pot Roast

A lean beef roast seasoned with salt, coated in tomato paste studded with peppercorns, and slow-cooked with onion and Worcestershire for an effortless pot roast.

  • 2 lb lean roast, trimmed
  • 1 tsp salt
  • 0.5 cup tomato paste
  • 24 whole peppercorns
  • 1 small onion, chopped
  • 1 tsp Worcestershire sauce

Instructions

    Sprinkle salt over roast; place in crockpot.

    Spread tomato paste over meat. Imbed peppercorns into paste.

    Top with chopped onion and Worcestershire sauce.

    Cover and cook on LOW 8–10 hours. Serve with accumulated gravy.
