- 1 small onion, chopped
- 1 tbsp of brown suga r
- 0.3 cup of cider vinegar
- 2 tbsp of catsup
- 2 tbsp of dry mustard
- 1 tsp of worcestershire sauce
- 0.3 tsp of ground cloves
- 1 tsp of chili powder
- 0.3 tsp of cayenne peppe r
- 1 0.5 lb Firm, whitefish fillets

Combine all of the sauce ingredients in a pot, place over medium heat and boil until reduced to a thin

syrup. Pour the syrup through a straine, rdiscard the cooked ingredients in the strainer and chill the

syrup. Place fish steaks or fillets in a baking dish and spoon smoe of the syrup over. Marinate in the
- 5
refrigerator for 1 hour. Cook the fish on a hot grill, basting with a teaspoon of barbec useyrup on each
- 6
side.
