Barbecued Bean Soup

  • 1 lb dried Great Northern beans, soaked overnight and drained
  • 2 lb beef short ribs
  • 1 medium onion, chopped
  • 2 tsp salt
  • 1/8 tsp black pepper
  • 6 cup water
  • 0.8 cup BBQ sauce

Instructions

    Place soaked beans, short ribs, onion, salt, pepper, and water into the slow cooker.

    Cover and cook on LOW for 10–16 hours until beans are very tender.

    Remove short ribs; strip meat from bones and discard bones.

    Return meat to slow cooker. Stir in BBQ sauce.

    Heat through on HIGH for 15 minutes. Taste and adjust seasoning.

    Serve in bowls with cornbread.
