Bananas Foster

  • 8 tbsp butter, cut into cubes
  • 0.5 cup brown sugar
  • 0.5 tsp ground cinnamon
  • 4 ripe bananas, peeled and halved lengthwise
  • 1 cup banana liqueur
  • 1 cup dark rum
  • 1 pint vanilla bean ice cream
  • 8 slices yellow pound cake

Instructions

    In a large sauté pan, melt the butter. Stir in brown sugar and cinnamon.

    Add bananas and baste them with syrup for 2 minutes.

    Pull pan off burner. Carefully add banana liqueur and rum.

    Place pan back on stove and shake a couple of times — it should flame. If not, ignite with a match.

    Shake pan until the flame dies, basting bananas continuously.

    Place two scoops of ice cream between two pound cake slices to form a sandwich in each bowl.

    Spoon two banana halves on top and spoon sauce over. Garnish with powdered sugar and fresh mint.
