Banana Pudding

Classic Southern banana pudding with homemade custard, vanilla wafers, fresh bananas, and a golden meringue topping.

  • 4 whole eggs, separated
  • 0.7 cup sugar
  • 1/8 tsp salt
  • 2 tbsp cornstarch
  • 3 cup milk
  • 1 tsp vanilla extract
  • 2 whole bananas, sliced
  • 1 box vanilla wafer cookies
  • 5 tbsp sugar for meringue
  • 0.5 tsp vanilla for meringue

Instructions

    Beat 4 egg yolks slightly. Add sugar, salt, and cornstarch. Add to milk in saucepan and cook, stirring constantly, until thickened.

    Add vanilla extract. Layer vanilla wafers and bananas in an 8-inch square baking dish, standing wafers up around the sides.

    Pour pudding over vanilla wafers and bananas.

    Make meringue: beat egg whites until frothy, add 5 tablespoons granulated sugar, beat until stiff, then add vanilla.

    Spread meringue over top of pudding. Bake in a slow 300°F oven for 20 minutes or until golden brown on tips.
