Ingredients
Servings
4
- 8 tbsp butter, cut into cubes
- 0.5 cup brown sugar
- 0.5 tsp ground cinnamon
- 4 each ripe bananas, peeled and halved lengthwise
- 1 cup banana liqueur
- 1 cup dark rum
- 1 pint vanilla bean ice cream
- 8 slice yellow pound cake (about 1 inch thick)
- 2 tbsp powdered sugar for garnish
- 4 sprig fresh mint for garnish
Instructions
- 1
In a large sauté pan over medium heat, melt the butter. Stir in the brown sugar and cinnamon.
- 2
Add the bananas and baste them with the syrup for 2 minutes.
- 3
Pull the sauté pan off the burner. Carefully add the banana liqueur and rum.
- 4
Place the pan back on the stove and shake a couple of times. The pan should flame; if not, ignite with a match.
- 5
Shake the pan back and forth until the flame dies, basting the bananas continuously.
- 6
To assemble, place two scoops of ice cream between two slices of pound cake to form a sandwich. Place in the center of a shallow bowl.
- 7
Spoon two banana halves on top of the sandwich. Drizzle the caramel-rum sauce over the top.
- 8
Garnish with powdered sugar and fresh mint.
