Banana Chocolate Bread Pudding
Ingredients
- 6 each eggs
- 6 cup half-and-half
- 1 cup heavy cream
- 2 tsp vanilla extract
- 0.8 cup sugar
- 0.5 tsp ground cinnamon
- 1 pinch grated nutmeg
- 0.5 lb bread, cut into 1-inch cubes (about 8 cups)
- 1 cup dark chocolate pieces
- 2 each ripe bananas, peeled and sliced 1/8 inch thick
- 4 tbsp unsalted butter (for bourbon sauce)
- 0.5 cup sugar (for bourbon sauce)
- 0.3 cup bourbon
- 4 each egg yolks (for bourbon sauce)
Instructions
- 1
Preheat the oven to 350°F (175°C).
- 2
Whisk the eggs, half-and-half, heavy cream, vanilla, sugar, cinnamon, and nutmeg together until the sugar dissolves.
- 3
Stir in the bread cubes and allow the mixture to sit for 1 hour, stirring occasionally.
- 4
Stir in the chocolate pieces and sliced bananas. Pour the mixture into a greased 10-cup baking dish.
- 5
Bake the pudding for about 1 to 1½ hours or until set. Remove from the oven.
- 6
For the bourbon sauce: melt the butter in a double boiler over simmering water. Add the sugar and whisk to dissolve.
- 7
Add the bourbon and whisk for 1 minute. Remove from heat and drizzle in the egg yolks, whisking constantly.
- 8
Return the double boiler to heat and continue whisking until the sauce is pale and slightly thickened, 3 to 4 minutes.
- 9
Spoon the bourbon sauce over the pudding and serve immediately. Garnish with fresh mint sprigs.
