Banana Bread (Slow Cooker)
A classic moist banana walnut bread baked right in the slow cooker — great for days when you don't want to heat up the oven.

- 1 0.8 cup all-purpose flour
- 2 tsp baking powder
- 0.3 tsp baking soda
- 0.5 tsp salt
- 0.3 cup shortening
- 0.7 cup sugar
- 2 eggs, well beaten
- 1 0.5 cup overripe bananas, mashed
- 0.5 cup walnuts, coarsely chopped

Sift together flour, baking powder, baking soda, and salt.

Beat shortening until fluffy; gradually add sugar. Beat in eggs in a slow stream.

Alternately fold in flour mixture and mashed bananas in thirds; fold in walnuts.

Pour into a greased bread pan that fits inside your crockpot. Cover with foil. Cook on HIGH 2–3 hours until a toothpick comes out clean.
