Southern Baked Yellow Squash

  • 2 0.5 lb yellow summer squash
  • 2 eggs, beaten
  • 1 0.3 cup dry bread crumbs, divided
  • 0.5 cup butter
  • 0.3 cup sugar
  • 1 tsp salt
  • 2 tbsp finely chopped onion
  • 1/8 tsp black pepper

    Preheat oven to 350°F (175°C). Lightly grease a 3-quart casserole dish.

    Trim and cut squash into chunks. Boil in salted water until tender, about 10–12 minutes.

    Drain in a colander and mash well.

    Mix mashed squash with beaten eggs, 1 cup bread crumbs, butter, sugar, salt, onion, and pepper until combined.

    Transfer to prepared casserole. Top with remaining ¼ cup bread crumbs.

    Bake 25–30 minutes until heated through and topping is golden.
