Baked Stuffed Lobster

- 4 whole lobsters (1.25 lb each), split
- 0.5 lb shrimp, peeled and coarsely chopped
- 0.5 lb lump crabmeat
- 1 0.5 cup Ritz crackers, crushed
- 0.5 cup white wine
- 4 tbsp butter, melted
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh lemon juice

Preheat oven to 425°F.

Make stuffing: combine shrimp, crabmeat, crushed crackers, white wine, half the butter, garlic, parsley, and lemon juice. Mix well.

Split lobsters in half lengthwise. Remove stomach sac and intestine. Crack claws.

Fill lobster cavities generously with stuffing mixture.

Brush with remaining melted butter.

Bake 20-25 minutes until lobster meat is opaque and stuffing is golden.

Serve with drawn butter and lemon wedges.
