Baked Rice Pudding

  • 3 eggs, beaten
  • 2 cups of milk
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla
  • 1/2 teaspoon of salt
  • 1 1/2 to 2 cups of cooked rice
  • 1/3 to 1/2 cups of raisins (optional)
  • Ground nutmeg

Instructions

    Combine the first 5 ingredients and mix well.

    Add the rice and raisins.

  3. 3

    Turn into a 10 X 6 X 1 3/4 inch baking dish.

    Bake, uncovered, at 325 degrees for 30 minutes, then stir.

    Sprinkle with nutmeg.

  6. 6

    Continue baking until a knife inserted in the center comes out clean (about 30 minutes more).
