Baked Manicotti

  • 1 lb ricotta cheese
  • 1 0.5 lb mozzarella cheese, grated (divided)
  • 0.3 cup Romano cheese, grated
  • 0.3 cup provolone cheese, grated
  • 3 eggs
  • 2 tbsp fresh parsley, chopped
  • 1 package manicotti shells (12-14 tubes)
  • 3 cup tomato sauce
  • 1 tsp salt and pepper to taste

Instructions

    Preheat oven to 350°F. Cook manicotti shells according to package directions; drain carefully.

    In a large bowl, combine ricotta, 1 lb of the mozzarella, Romano, provolone, eggs, parsley, salt and pepper. Mix well.

    Spread a thin layer of tomato sauce on the bottom of a 9x13 baking pan.

    Stuff each manicotti shell with the cheese mixture. Arrange in a single layer in the baking pan.

    Spoon more tomato sauce over and between the manicotti. Top with the remaining 1/2 lb of mozzarella.

    Bake for 45 minutes until hot and bubbling. Broil for the last 2–3 minutes to brown the cheese top. Serve with extra sauce.
