Baked Clams

  • 48 piece littleneck clams
  • 1 0.5 cup bread crumbs
  • 4 clove garlic, minced
  • 4 tbsp roasted peppers, minced
  • 4 tbsp olive oil
  • 1 tbsp dried oregano

Instructions

    Pry open clams with a butter knife. Cut out the clam meat and reserve in a bowl. Save one side of each clam shell. Chop the clam meat into small pieces.

    In small bowl combine bread crumbs, garlic, roasted peppers, olive oil and oregano. Mix well. Combine with chopped clam meat.

    Spoon mixture into clean clam shells. Place clams on large cookie sheet.

    Bake at 375°F for about 10 minutes. Optionally garnish with Parmesan cheese and lemon before serving.
