Baked Chile Cheese Corn

  • 4 cup fresh or frozen corn kernels, thawed and drained
  • 1 cup Cheddar cheese, grated
  • 8 oz cream cheese, room temperature
  • 7 oz canned diced green chiles
  • 2 tsp chili powder
  • 2 tsp ground cumin

    Preheat oven to 350°F. Butter a 1½-quart baking dish.

    In a large bowl, combine corn, Cheddar cheese, cream cheese, green chiles, chili powder and cumin. Mix until well combined.

    Transfer to the prepared baking dish.

    Bake for about 30 minutes until bubbling and lightly browned on the edges.

    Serve as a side dish with grilled meats or alongside tacos.
