Avocado Crepes with Crab

  • 1 0.5 lb crab meat (or 2 cans)
  • 1 large avocado
  • 6 eggs
  • 0.8 cup all-purpose flour
  • 0.8 cup milk
  • 0.8 cup water
  • 3 cup cream sauce
  • 2/3 cup diced Gruyère cheese
  • 1 tbsp Worcestershire sauce
  • 0.5 cup grated cheese
  • 2 tbsp butter

Instructions

    Mash avocado; combine with eggs, flour, and salt. Beat smooth; gradually stir in milk and water.

    Heat a 6-inch pan; melt a bit of butter. Pour 4 tbsp batter; tilt to coat bottom. Brown both sides. Repeat for all crepes.

    Heat cream sauce; add Gruyère and cook until thickened. Remove from heat; add Worcestershire and crabmeat.

    Spoon filling on each crepe and roll. Arrange in buttered shallow baking dish; top with grated cheese and dots of butter.

    Bake at 425°F until cheese melts.
