Auntie Anne's Pretzels

Soft, golden copycat Auntie Anne's pretzels dipped in a baking soda bath and baked until perfectly chewy — brushed with melted butter and sprinkled with coarse salt or cinnamon sugar.

  • 1 0.5 cup warm water (105–115°F)
  • 1 1/8 tsp active dry yeast (about 1½ packages)
  • 2 tbsp brown sugar
  • 1 1/8 tsp salt
  • 1 cup bread flour
  • 3 cup all-purpose flour
  • 2 cup warm water (for soda bath)
  • 2 tbsp baking soda (for soda bath)
  • 2 tbsp coarse salt (for topping)
  • 3 tbsp butter, melted

    Sprinkle yeast over warm water in a large mixing bowl; stir to dissolve. Add brown sugar and salt; stir until dissolved. Add flours and knead until smooth and elastic. Let dough rise at least 30 minutes.

    While dough rises, prepare baking soda bath: combine 2 cups warm water and 2 tbsp baking soda in a shallow bowl. Stir often.

    Preheat oven to 450°F (230°C). Grease baking sheets.

    Pinch off pieces of dough and roll into long ropes (about ½ inch thick). Shape into pretzels or sticks.

    Dip each pretzel in the soda solution and place on prepared baking sheets. Let rise again 15 minutes.

    Bake 10 minutes or until golden brown. Brush immediately with melted butter. Sprinkle with coarse salt or cinnamon sugar while still hot.
