Asparagus, Orange And Endive Salad

- 2 0.5 cup asparagus, diagonally sliced
- 2 cup endive leaves, torn
- 2 large oranges, sliced into rounds
- 1 red onion, thinly sliced
- 0.3 cup raspberry vinegar
- 2 tbsp canola oil
- 1 tbsp orange juice
- 1 tbsp white sugar
- 1 tsp salt and pepper, to taste

Blanch asparagus in boiling water for 1 minute; drain and plunge into cold water. Drain again and pat dry.

Combine asparagus, endive, oranges, and red onion in a large bowl.

Whisk together raspberry vinegar, canola oil, orange juice, sugar, salt, and pepper.

Pour dressing over salad, toss well, and serve.
