  • 0.8 small onion, minced
  • 1 0.5 tsp capers, rinsed and chopped
  • 1 tsp lemon juice
  • 1 leaf fresh mint
  • 1 lb thin asparagus
  • 1 pinch salt
  • 1 pinch freshly ground black pepper

Instructions

    Place minced onion and a pinch of salt in a bowl large enough to hold the asparagus. Mix well and let steep for 30 minutes.

    Add the capers, lemon juice, and mint leaf to the bowl and marinate for at least 1 hour, mixing thoroughly from time to time.

    Meanwhile, bring a large pot of salted water to a boil and cook the asparagus until tender but still crisp, about 3 minutes.

    Drain the asparagus well.

    Toss the still-warm asparagus with the caper marinade. Season with salt and pepper, toss gently, and serve.
