Artichokes Ricotta Salami
Fresh artichokes stuffed with ricotta and salami.

- 4 medium Fresh artichokes
- 1 cup Ricotta cheese
- 4 oz Salami
- 0.5 cup Grated Parmesan
- 0.3 cup Breadcrumbs
- 2 tbsp Chopped parsley
- 2 clove Garlic
- 2 tbsp Olive oil
- 1 tsp Lemon juice

Cut top quarter off artichokes.

Cut off stems and scoop out fuzzy centers.

Boil in salted water with lemon juice 15-20 minutes.

Drain and cool.

Combine ricotta, salami, Parmesan, breadcrumbs, parsley, and garlic.

Fill each artichoke with ricotta mixture.

Place in baking dish and drizzle with olive oil.

Bake at 375 degrees F for 15-20 minutes.
