Artichoke Crab Beignets
Crispy fried beignets with artichoke and crab.

- 1 cup Artichoke hearts
- 0.5 lb Lump crab meat
- 0.3 cup Chopped green onions
- 2 tbsp Mayonnaise
- 1 tbsp Creole seasoning
- 1 cup All-purpose flour
- 0.5 tsp Baking powder
- 0.5 cup Cornstarch
- 1 each Egg
- 0.5 cup Milk
- 2 cup Vegetable oil for frying

Combine artichoke hearts, crab, green onions, mayo, and seasoning.

Whisk flour, baking powder, and cornstarch.

Combine egg and milk.

Fold wet into dry to form batter.

Heat oil to 350 degrees F.

Drop crab mixture into batter; slide into hot oil.

Fry 2-3 minutes per side until golden.

Drain on paper towels.
