Artichoke Casserole

- 0.3 cup olive oil
- 1 clove garlic, minced
- 0.3 cup scallions, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp all-purpose flour
- 0.8 cup milk
- 13 0.8 oz canned artichoke hearts, drained and quartered
- 0.5 cup sharp Cheddar cheese, shredded
- 0.5 cup Parmesan cheese, grated

Preheat oven to 325°F.

In a skillet, sauté garlic, scallions and parsley in olive oil over medium heat until softened.

Whisk in flour and gradually stir in milk. Cook over medium heat, stirring, until sauce thickens.

Fold in artichoke hearts. Transfer to a 2-quart casserole dish.

Sprinkle Cheddar and Parmesan cheeses on top.

Bake for 15 minutes until cheese is melted and bubbly.
