- 3 lb fish fillets (cod, haddock, or similar)
- 2 cup all-purpose flour (for initial dusting)
- 3 cup pancake mix
- 3 cup club soda
- 1 tbsp onion powder
- 1 tbsp seasoned salt
- 6 cup vegetable oil, for frying

Moisten fish fillets slightly. Dip each piece lightly in all-purpose flour, then shake off excess. Place on waxed paper and let air-dry 5 minutes.

Whisk the pancake mix with club soda until it reaches buttermilk consistency — pourable but not too thin. Beat in onion powder and seasoned salt.

Heat oil in a heavy saucepan to 425°F (220°C).

Dip each floured fillet into the batter and carefully drop into the hot oil. Fry about 4 minutes per side until deep golden brown.

Transfer to a baking sheet in a 325°F (165°C) oven to keep warm while frying remaining batches. Serve immediately.
