  • to 3 lb. Broiler-fryer chicken, cut up
  • 2 tbs. cooking oil
  • 1 0.5 cup long grain rice
  • 1 cup chopped onion
  • 2 clove garlic, minced
  • 3 cup water
  • Can tomatoes, cut up
  • 1 tbs. Instant chicken bouillon granules
  • 1 tsp salt
  • 0.3 tsp pepper
  • 0.3 tsp coriander
  • 1 cup frozen peas
  • can sliced pimientos

    Sprinkle chicken lightly with salt. In a 12-inch skillet brown chicken in hot oil about 15 minutes. Remove chicken from pan. In drippings remaining in pan, cook rice, onion, and garlic until rice is golden. Add water, undrained tomatoes, bouillon granules, salt, pepper, and coriander. Bring to boiling, stir well.     simmer 30-35 minutes or until chicken is tender. Add peas. Cover and cook 5 minutes more. Garnish with pimiento strips. Makes 4-6 servings.
